Hospitality Management Rolls in the Dough for Charity

food on a plateIn March, hospitality management students and faculty took on two of the five courses served at the "Chefs Against Domestic Violence" dinner, raising money for the Women's Center of Marquette. In keeping with the dinner’s theme—the Center’s history—Chef Deborah Pearce prepared Whitefish Roulade.

Pearce stated that she “selected this dish in order to honor Holly Greer, who was not only pivotal in the Women’s Center but was also concerned about the well-being of the Great Lakes.” 95 people from the local community came to celebrate the Women’s Center and its cause.

Apr. 16 marked the main event: "A Dinner in Wonderland," based on the book by Lewis Carroll.

“There was a delightful turnout,” Pearce said. 75 guests enjoyed a five-course dinner with wine, as well as games and contests with prizes.

This event was hosted by the Hospitality Management Banquets and Catering class (and many volunteers) and raised over $1,500.00 to put towards three HM scholarships.

culinary students with foodFinally, the HM team competed in the 3rd annual Chefs Challenge on Apr. 23. This competition benefits Challenge Mountain, a non-profit organization designed to help physically-impaired, mentally-challenged and at-risk youth gain better access to outdoor recreation.

Pearce coached the NMU team, including students Zach Schroeder, Ryan Junglas, Patrick Digneit, and Scott Bousson. This event was open to the public, and about 250 food lovers were in attendance.

Pearce said, “Though the NMU team did not take the prize, we did represent NMU with professionalism and dignity, having an outstanding booth that drew lots of attention to the HM program.”
