Leslie Cory has been teaching in the hospitality management program since 1997. She has taught several courses within the program as well as developed and wrote curriculum for HM 295: Special Topics in Hospitality: Food and Film—a 4-credit course focusing on various landmark art films featuring cooking and eating from five distinct civilizations and introducing basic theories and critical methods of cultural studies through the use of film productions as cultural texts.
In addition to these teaching assignments, Professor Cory has been involved in the operation of the Culinary Café as well as managing and operating the very popular CHEZ NOUS restaurant in the Jacobetti Complex since the winter of 2001.
Before coming to Northern Michigan University, Professor Cory was a research and development chef, managing the test kitchen for LSG Lufthansa Sky Chef’s Corporate Headquarters in Arlington, Texas. At Sky Chef’s, she was part of an R & D team that designed first class and business class meals for clients such as American Airlines, British Airways, Lufthansa and more.
Professor Cory has extensive experience in back of the house operations with jobs, including the French restaurant La Cite in New York City to The Ritz Carlton in St. Thomas, US Virgin Islands. Her management experience includes a fast-paced restaurant and oyster bar on Mackinac Island, as well as a busy beach bar and grill in the Caribbean.
She has been awarded The Upper Michigan Chapter of the American Culinary Federation Certificate of Achievement, the Chaine de Rotisseur, Hudson Valley Chapter Certificate of Excellence and The Culinary Institute of America, Hyde Park, NY, Distinguished Service Award.
Professor Cory serves on, or works with, the following committees and/or outside organizations: COPs Grant Review Committee, Academic Service Learning Advisory Board and Grant Review Committee, NMUFA Promotions Review Committee, NMUFA By-law Review Committee, Hospitality Management Advisory Committee, National Restaurant Association, Michigan Restaurant Association, Share OUR Strength, America’s Second Harvest, Roundtable of Women in Foodservice, Marquette County Habitat for Humanity, The Upper Michigan Children’s Museum and The First Presbyterian Church of Marquette, MI.
Professor Cory gives the same advice to her students as her uncle had given to her when she first started school:
1. Go to every class, every day.
2. Sit in the front row.
3. Ask questions – there is no stupid question.
4. Visit your adviser at least once per semester.
