The French Program offers a free seminar on French baking by Peter Claybaker, owner and head baker of the Marquette Baking Company. Claybaker’s talk Flakey French Laminated Pastries: Fussy, but Fantastic covers croissant, puff pastry and other variations of laminated dough, and how these are used to create pastries and desserts. The presentation also provides the history, the baking processes, and a taste of the products.
